Black Bean Fudge

Who would have thought that eating beans could taste so good?

Black Bean Fudge Recipe

1/2 cup black beans, rinsed, cooked, and drained
1/3 cup cocoa powder
1/3 cup softened butter
1 tbsp. vanilla
2 1/2 cups powdered sugar

Combine all ingredients in a food processor, and blend until smooth. Scoop out small portions with a scoop or a spoon into mini paper liners. Refrigerate for 5 minutes to set up or use immediately for frosting a cake.

When I have left overs, I simply place them in the fridge for guilt free finger-dipping! Sssshhhh.
