Cornbread



Who knew that grinding popcorn to make fresh cornmeal could be so easy? Wow! It actually tastes like fresh corn. Just remember, when grinding your popcorn, be sure to put your grinder on the coarsest setting for the finest flour. Keep your cornmeal refrigerated and it will last up to 6 months.

Anitra's Cornbread Recipe
2 cups Biscuit Mix
1 cup sugar or 1/3 cup Xagave
1/2 tsp. baking soda
1/3 cup fresh cornmeal
1 cup milk
3/4 cup oil
2 eggs

Combine all ingredients in a large mixing bowl, and beat until smooth, about 1 minute. Transfer batter to a prepared baking pan (9x9), and bake at 350 for 25 to 30 minutes or lightly golden.
