Homemade Bread--Start to Finish

Here's the recipe:

Anitra's Whole Wheat Bread

4 cups hot water
1 Tbsp. sea salt
1/2 cup honey or Xagave
1/2 cup oil
1/2 cup rolled oats
1/2 cup powdered milk
1/2 cup vital wheat gluten
2 Tbsp. Saf Instant Yeast
8 cups
whole wheat flour

In a large mixer, using the bread dough hook, combine water, salt, honey, oil, rolled oats, powdered milk, and 2 cups of wheat flour. Blend for 10 seconds. Add yeast, vital wheat gluten, and slowly add more flour , while mixing, until the dough begins to leave the sides of the bowl. Knead 10 minutes, or until all of the bowl is cleaned and there is no more dough left around the sides of the bowl. The dough should be elastic and smooth.

Cover the dough, and allow it to rise till double, about 30 minutes. Preheat the oven to 150 degrees, then turn it off. Shape dough into 3 loaves, and place into lightly oiled pans. Place the pans inside the warm oven, making sure the oven is turned OFF.

Allow to rise, uncovered for 30 minutes, or until doubled in bulk. Turn on the oven to 350 and bake for 40 minutes or until the loaves are golden brown and hollow-sounding when tapped. Remove the loaves from the oven and allow to cool in the bread pans 10 minutes before removing them from the pans. Enjoy!
