Homemade Granola

Yummy! Whether it's breakfast time, snack time, or any other time, you'll love the crunch and the wow in this granola recipe. I can't seem to make enough (8 pans at a time!) My family just loves this recipe. Perfect on yogurt with fruit or even with Vanilla Ice Cream.

8 cups rolled oats or 6-grain rolled cereal
1/2 cup oil
1⁄2 cup brown sugar
1/2 cup honey or Xagave
1 cup coconut, shredded
1/3 cup sesame seeds
1/4 cup pumpkin seeds
1⁄4 cup sunflower seeds
1 cup raisins or other dried fruit (optional)
1 cup chopped nuts (optional)

Mix all dry ingredients with the exception of the fruit. In a separate bowl, whisk together: 1⁄2 cup oil , 1/2 cup brown sugar, 1/2 cup honey and 2 tsp. vanilla.

Pour liquid mixture over dry mixture and stir to coat thoroughly. Spread on several cookie sheets and bake at 350 degrees for 15-20 minutes. Stir frequently to insure even baking. Add 1 cup raisins or other dried fruit during the last 5 minutes of baking. Don’t over bake. Let cereal cool on baking sheets.

When cooled, break up any large pieces. Store in airtight container. Makes 10 cups.
