Remember, for the lightest and flakiest crust, be sure to use cold water, and a very light hand on the dough. Over mixing the dough makes it tough and dry. Be sure to refrigerate your pie dough before rolling it out so it's well chilled. If I'm in a hurry, I'll place my dough in the freezer for about 25 minutes, and it's great.
It's always smart to have some frozen pie dough on hand for those busy nights or those quick cravings. The dough thaws in about 40 minutes on the countertop, and always tastes fresh!
