Hold on to those bread crumbs, cereal crumbs and cracker crumbs and freeze them! I find that when I'm making bran muffins, I go straight to my cereal crumbs and use them in place of the bran. Clever? It works!
What about bread and cracker parts that no one wants to eat? Just place them in the blender all together, and it makes a great breading for chicken or potato dishes. Add your own seasonings, and you'll come up with your own favorite blends.
Hey, maybe those crumbs aren't so crumby after all. Just think! No more stale bread crumbs from the market. Just use the fresh or frozen kind at your home!
Here's a yummy recipe that I made just this morning using crumbs from my Frosted Mini Wheat Cereal container plus a little oat flour.
Healthy Chocolate Chocolate Chip Cupcakes
1/2 cup oat flour (from oat groats)
1 1/4 cups cereal crumbs
1/4 cup cocoa powder
1/2 cup packed brown sugar
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 cup warm water
1/4 cup oil
1 Tbsp. vinegar
1 tsp vanilla
1/2 cup chocolate chips
Blend all dry ingredients until well blended. Add all liquid ingredients, mixing in oil and chocolate chips very last. Pour batter into 12 prepared muffin liners and bake at 400 for 25 minutes. Top with cream cheese frosting or eat plain. Moist and delicious! The best part? No white anything--no white flour or sugar!
