Wheat Berries

Hey there, here's another great thing to do with your wheat! Cooked wheat berries are perfect on salads, on yogurt, or in soups. They're full of nutrition, and are cooked just like rice. Simply put 1 cup of wheat berries in a pan with 2 cups of water, and bring to a boil. Once the water boils, cover the pot, and simmer 20 minutes until tender. Refrigerate wheat berries until ready to use.

Wheat Berry Apple Salad

2 cups cooked, cubed chicken
1/3 cup wheat berries
2 cups corkscrew pasta, cooked and drained
1/2 cup chopped pineapple
2 granny smith apples
1/2 cup red grapes
1/4 cup cashews

1 Tbsp. lime juice
zest of one fresh lime
1/4 cup honey
1/2 cup mayonnaise
1/4 cup sour cream or cream cheese, softened
s/p to taste
