Anitra's Favorite...Curry in a Hurry

4 chicken breasts
1/4 cup butter
1/4 cup celery, sliced thinly
3/4 cups chicken broth
2 Tbsp. curry
1 Tbsp. garam marsala (optional)
1/4 cup flour
1/2 cup chopped onion
1/4 cup golden raisins
1 cup half and half or milk
salt and pepper to taste

Cook the chicken and cut into 1/2 inch chunks. Set aside. Melt butter, and saute onion, celery, and raisins until tender. Add chicken broth and milk, then cook, uncovered for 5 minutes. Stir in the curry, and salt and pepper, and 1 Tbsp. garam marsala if desired. Simmer 10-20 minutes until thick and creamy. Add the chicken and serve over steamed rice.

This dish is also delicious with a side of steamed buttered sliced carrots and touch of brown sugar.
