Show & Tell...So Fun!

There's nothing more fun for me than to see that our viewers are enjoying the recipes we present in our online classes, and trying them out in their own kitchens.

Well, just to show what some of you have been up to...

Holly from Minnesota shares a picture of her Chicken Noodle Quinoa Soup (below). This soup was made in the Nesco 3-in-1 pressure cooker, and it's a really great way to add a little more fiber and nutrition to an all time favorite. Here's the recipe:
Chicken Noodle Quinoa Soup

3 Chicken Breasts
1 onion, chopped
2 stalks celery, chopped
2 garlic cloves, chopped
2 quarts water
1 Tbsp. salt
2 tsp. pepper
2 carrots, sliced

Place all ingredients except carrots in electric pressure cooker and pressure cook on high 14 minutes. Remove the lid and strain the liquid off of the chicken, saving the liquid. Discard cooked vegetables. Place liquid back in pressure cooker, and shred the chicken, adding back into the broth. Add the sliced carrots as well as the following ingredients:

1 cup uncooked quite quinoa
1 lb. egg noodles
1 quart more water

Pressure for 6 minutes. Garnish with fresh parsley.
