Mmm...Quick Sweet Potato Soup



Steaming your vegetables is the greatest way to cook with zero fat, plus steaming helps to lock in the nutrition of your food.

And now that it's fall, this is a great soup to warm you up!

Watch as we turn steamed sweet potatoes into a fast and flavorful soup.

Here's the recipe:

Sweet Potato Soup

2 cups sweet potatoes or yams, steamed
2 cups chicken or vegetable broth
salt and pepper to taste
drizzle of olive oil
pumpkin seeds (optional)

Blend all ingredients in a blender, except seeds, and then sprinkle the pumpkin seeds over the soup just before serving. Tastes great cold in the summer, or hot in the winter.
