Powdered Buttermilk...A Must Have

 

I love using powdered buttermilk in my cooking, and enjoy the convenience of always having it on hand. Rarely do we need an entire quart of fresh buttermilk just for one recipe, so why waste the money buying it fresh every time?



I'd like to share some of my favorite Buttermilk recipes below. Think outside the "box" of buttermilk, and see how convenient this "can" really be for you.


To make 1 cup of buttermilk, simply combine 1 cup water with 1/3 cup buttermilk powder. Done!

Best Buttermilk Pancakes

2 cups water
3 tbsp. Xagave or Sugar
3 tbsp. coconut oil
2 eggs, separated
1 tsp. baking soda
1 tbsp. baking powder
1 1/2 cups flour
1 1/2 tsp. salt

In a large bowl combine all ingredients, except egg whites. In a smaller bowl, whip the egg whites until stiff, and once the pancake mixture is well mixed, fold in the egg whites. Bake pancakes on a hot buttered griddle. Enjoy!

Lemon Poppyseed Muffins

3 eggs
1 1/4 cups Xagave
1 cup coconut oil
1 1/2 cups water
1 1/2 tsp. salt
1 1/2 tsp. baking powder
1 1/2 tbsp. poppy seeds
1 tsp. lemon zest
2 Tbsp. fresh lemon juice or  1/4 tsp. lemon extract
1 1/2 tsp. vanilla extract
1 1/2 tsp. almond extract
3 cups flour

Beat together the eggs, xagave, and coconut oil. Add in water, buttermilk powder, salt, baking powder, poppy seeds, vanilla, almond flavoring, and flour. Mix well. 

Bake in a paper lined muffin cups at 350 degrees for 15-20 minutes.  Enjoy!
