Nutty Brown Rice Salad

2 cups cooked brown rice
1 1/2 cups water
1 can kidney beans, rinsed and drained
1/4 cup sliced red onion
1/4 cup sliced fresh mushrooms
1/4 cup chopped broccoli florets
1/4 cup chopped  yellow bell pepper
1/4 cup chopped red bell pepper
1/4 cup chopped green or orange bell pepper
3 tbsp. chopped raw almonds
1/4 tsp. coarse black pepper
2 tbsp. fat-free Italian dressing
1 tbsp. extra virgin olive oil

Combine all ingredients in a large bowl, tossing with Italian dressing and olive oil. Chill at least one hour before serving. To your health!
